In the development and application of natural pigments, Japan is at the forefront of the world, as early as 1975, the use of natural pigments has exceeded the synthetic pigment. Japan's natural pigment market has exceeded the size of 200 million yen, while synthetic pigments account for only one-tenth of the market, about 2 billion yen. By May 1995, 97 species of natural pigments had been approved for use in Japan.
Japanese market demand in the previous year in more than 200 tons is caramel pigment, rouge tree orange, red pigment, gardenia yellow pigment, chili red pigment and ginger yellow pigment and other 6 kinds of natural pigment products, including caramel pigment demand is the largest, annual consumption of 2000 tons, accounting for about 40% of the total consumption of natural pigment. China's natural edible pigment products in the production of secondary caramel pigment is the largest, annual production accounts for about 86% of natural edible pigment, mainly used in the domestic brewing industry and beverage industry. The second is red Qu Hong, Gao Lianghong, Gardenia yellow, radish red, chlorophyll copper sodium salt, carotene, cocoa shell color, turmeric, etc., mainly used in the preparation of wine, candy, cooked meat products, jelly, ice cream, artificial crab meat and other foods. Due to the high price of natural edible pigment and the limitation of living standard, its application in domestic food manufacturing industry is still less. With the further improvement of the living standards of our people, the return to nature, the consumption of all natural raw materials products will become the mainstream of food consumption in the future, the domestic food manufacturing industry on the demand for natural edible pigment will continue to grow, but also will open up natural pigments in medicine, daily production and other aspects of a broader field of application.
